Celiac is caused by a response to gluten-containing dietary items in individuals genetically predisposed to the condition. This autoimmune disease has an estimated prevalance of 1% of the global population. This assay detects and quantifes unintentional gluten consumption by measuring the amount of gluten detected in a sample.
